Hello everybody! I am not here today to reinvent the wheel, I am simply here to pass on a tip that will make basically any dish pop. I never really liked onions, I always pick them out of my burgers and I always leave them out of my salads. That being said, pickled red onions add an extra oomph to any dish and I have really grown to love them. So yeah, now I am passing on this love. They are not like regular raw onions you guys, they are sweet, with a taste of vinegar and pepper.
You can use these onions for practically anything. Yesterday I added them as an acidic component to my vegan mac and cheese recipe. Find the recipes for vegan mac and cheese here: “Vegan ‘Cheesy’ Pasta Recipes”
What you will need: 1 large red onion // vinegar // whole pepper // 2 tbsp of sugar
Peel the red onion and cut it until thin slices. Place the slices in a glass jar (or any large leak-proof container really). Pour in the vinegar until the onion slices are completely covered. Add in about half a tablespoon’s worth of peppers and 2 tablespoons of sugar. Let the mixture rest of about 6 hours, or preferably overnight and now you have delicious pickled red onions.
